Strawberry Yogurt Muffins 2 tablespoons canola oil
1/3 cup sugar
2 large eggs
1 cup lowfat plain yogurt
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 (3 oz.) package strawberry jello
1 cup finely chopped rhubarb
Preheat oven to 350° F.
In bowl, mix oil, sugar, eggs and yogurt. In a separate bowl mix gelatin powder and rhubarb. Pour liquid ingredients over dry ingredients. Add rhubarb and stir.
Divide into muffin tins, sprayed with non-stick cooking spray.
Bake 20-25 minutes, or until done. Cool 5 minutes. |
