HONEYED STRAWBERRIES
For about 700 grams (l 1/2 Ibs) strawberries, which will serve 4-6, prepare the following syrup. In a wide saucepan, dissolve 4 tablespoons runny honey and 2 tablespoons sugar in 150 millilitres (1/4 pint) water. (Use mild honey for this. A strong honey would get in the way of the flavour of the strawberries.)
Add a strip of lemon peel and simmer for 5 minutes. Add strawberries to the simmering syrup and cook gently for 5 minutes before switching off the heat.
Allow to cool to lukewarm before serving. |
